María Dolores del Castillo Bilbao

Dr. M. Dolores del Castillo is a Research Scientist in the Spanish National Research Council (CSIC). She received her PhD in Food Science and Technology at Complutense University of Madrid, Spain in 1999. She was awarded with a Marie Curie fellowship from the European Commission to complete her postdoctoral training in Food and Health at University of Reading, UK and a Salvador Maradiaga grant for her training at Beth Israel Deaconess Medical Center/Harvard Medical School in Nutrition/Metabolism, Boston, USA. In 2004, Dr. del Castillo was appointed as Tenured Scientist at CSIC and as Research Scientist in 2009. Since 2011, she is Head of Food Bioscience Laboratory at the Institute of Food Science Research (CIAL), a research institute belonging to CSIC and the Autonoma University of Madrid (UAM). She has published more than 90 peer-reviewed scientific research papers (51 in the last 10 years), 14 book chapters, more than 20 articles in non-indexed journals, has participated in more than 100 communications in national/international conferences and authored 5 patents. She has been principal investigator in more than 10 research projects funded by different agencies and industry. She was a Professor of the Ingredients and Functional Foods Module, Master in Food Quality and Safety of the University of the Basque Country (UPV/EHU), Spain (2007 – 2018) and is currently a Professor of the Master of Food Safety organized by the Official College of Veterinarians of Madrid. In the last five years, she has supervised more than 15 BSc, 20 MSc and 6 PhD Theses. She is Certified as Functional Foods Scientist by FUNCTIONAL FOOD CENTER INC., USA (Certificate number: 1006FFC/FFI).
