Safer alternatives to sulphur preservatives

Sulphur dioxide has been found to boost a plant’s defence systems, potentially changing the way grapes, wine and dried fruits are preserved.

A worldwide ban on the use of sulphur dioxide and sulphites in fresh produce has been in force since the 1990s, but table grapes were exempted.

The findings could be a turning point in the quest for safer alternatives to sulphite preservatives.
