Tiny fibres the key to next-gen stout froth

Mathematicians at the University of Limerick have discovered that tiny plant fibres can make nitrogen bubbles in stout beer to form a creamy head of foam. The find could mean an end to more expensive and less-eco-friendly methods currently used to fizz canned stouts such as Guinness.
