I lead an innovative research cluster- Food Insights and Sustainability- we have developed demonstrations of the the first route to net-zero food manufacturing processes using steam infusion and the sustainable waste reducing outcomes of efficient food preservation. I develop digital twin and modelling applications that enable manufacturers to report the sustainability of their material and energy use. I am a trustee and fellow of the Institute of Food Science and Technology, and I mentor highly motivated early career research leaders, advise business start-ups and work with international sustainable nutrition programmes. Oh, I also develop commercial geospatial applications for materials and consumer goods using Earth Observation platforms. I have been working in sustainability since 1998, after a eight years of doctoral research in biochemistry in the UK at Sheffield, Rothamsted and Durham, and the USA at the University of Florida. I started my sustainability practice with Levington Agriculture and the BASIS/FACTS leadership team delivering communication and certification programmes- even the beginning of ISO14001 Environmental Management Systems in agriculture- for over 400 agronomists across UK agriculture 1998-2002. I have held visiting scientist roles at CSIRO, Australia and the OECD in Paris before writing numerous papers, stacks of media and 2 books so far which still sell 'Global Food Security and Supply' published by Wiley and 'Food Industry 4.0' published by CABI.
