Gabriella M Petrick

Gabriella M Petrick is a food historian. She is currently finishing a book on the industrialization of American food systems in the twentieth century.

Her second book length project is on the history of taste in global perspective. It examines the biological, as well as the social and cultural aspects of taste, and how our understanding of sensorial taste has changed over time.
