The ability to taste bitterness in food may have been advantageous for human evolution.

While a bitter taste can often be found in healthy foods like vegetables, it can also be a signifier of toxicity.

Taste receptors are not only involved in oral sensory perception. An individual’s sensitivity to a bitter compound may also have significance for immune response and metabolism.
