Diana Cuy Castellanos is a registered dietitian and teaches within the program of nutrition and dietetics. Courses she teaches include nutritional biochemistry, research methods, sports nutrition, and community nutrition. Her research interests lie in examining dietary acculturation in immigrant populations, food insecurity, and food access. She is a board member of the Hunger and Environmental Nutrition Dietetic Practice Group; she is also a member of the Academy of Nutrition and Dietetics and the American Public Health Association. Her research interests include dietary acculturation, nutrition transition and community-based participatory research.
