Mariana Lamas is a research associate at NAIT's Centre for Culinary Innovation. Her work at the Centre focuses on researching and developing new food products and managing and providing planning expertise to projects. She is particularly interested in plant-based food and how new technologies and innovations are changing how we perceive food and the way we eat.
Mariana has a diploma in Culinary Arts from NAIT. She has been working with food research for the past 6 years. Before that, she worked in the museum and heritage sector and holds a bachelor’s and M.A. in Museology.
