Oluwatoyin Onipe

Postdoctoral Researcher, University of Venda

Oluwatoyin is a Food Scientist with research interests in oil uptake reduction of deep-fried dough; starch digestion and glycemic index prediction, non-invasive methods of food characterisation and the application of bioprocessing methods for modification of dietary fibres generally regarded as food waste. Other research interests include sensory science and food product development.
