Rahel Mathews is a Registered Dietitian and an Assistant Professor for the Department of Food Science, Nutrition and Health Promotion at Mississippi State University. Her research interests center on public health nutrition topics such as: the role of nutrition in prevention of chronic diseases, global nutrition, food insecurity, healthy eating, childhood obesity, health disparities, aging, nutritional epidemiology, and water. She currently teaches Community Nutrition, Nutrition through the LifeCycle, Child Health and Nutrition and Research Methods.
